Fiona Cairns, the Royal Cake Designer and one of Britain's most established British cake designers chatted to us about Summer Baking and what her advice is:
'Simplicity is the key to summer baking- who wants to spend hours in the kitchen when the sunshine (we hope) beacons outdoors? Fill light airy sponges, pavlovas, open fruit tarts with our wonderful strawberries, raspberries, cherries, blueberries, red and blackcurrants etc -we are so spoilt for choice!
Now is the time to make the most of the abundance of all our home grown summer berries and fruits-at their very freshest, sweetest and of course cheapest as have not been flown in from far away.
Bake a batch of buttery short breads, or a pile of mini meringues to accompany a bowl of sweet strawberries or raspberries and a jug of thick double cream. Simple and quick and a perfect desert for any barbeque, summer party or picnic."
