Fiona Cairns one of Britain's most established luxury cake designers is now part of 5ive Star London and we had the opportunity to ask the Queen of Cakes as to what she gets up to during the festive season!

‘’I have always loved celebrating Christmas, and after all those thousands of Christmas cakes are made, it is lovely to relax! We live in an old house-with a log fire, so that burning, and lots of candles set the scene. We have a Spruce tree which imparts a wonderful scent, and I sometimes throw clementine peelings or sprigs of rosemary onto the fire to add to the Festive scents. I love all the endless preparations and lists too, and baking is of course central to our Christmas. It is quite traditional-Christmas cake(a lovely Fig, Port , Star Anise recipe from my book this year), homemade  gingerbread men on the tree, piles of mince pies and other festive treats.
