5ive Questions with William Curley

William Curley has been voted Britain's Best Chocolatier for 4 years in a row and it is a complete delight visiting his boutique in Belgravia for a taste of truly luxurious handmade chocolates. We had the chance to ask the man behind the brand himself a few questions about his company and experiences so far!

 

 

What inspired you to start your own chocolate company?

Like many chefs we all dream to have our own shop, in my case a Patisserie Chocolaterie has been a dream for many years. My natural progression was for Suzue and I to open our own boutique in Richmond in 2004.

What has been the highlight of your career to date?     

For me, there is not one specific highlight, highlights come in many ways. Highlights over the years have included becoming Chef Patissier at La Tante Claire and The Savoy. Winning gold at the Culinary Olympics and winning Britain's Best Chocolatier are also awards I will treasure. There is no one highlight I could single out, they are all spikes, it's all about having great products and being consistent that matters.

What aspect of running your own company do you enjoy the most?      

I think what I enjoy the most out of running my own business is the opportunity to train and mentor young people in our craft and give them responsibility, both my Head Chocolatier and Head Patissier have trained with me for many years and every year we take on new apprentices and hope to develop them into the next generation of Patissiers and chocolatiers.

Whats the next project you are working on? Are you launching anything new this summer?

Late last year we launched our book Couture Chocolate and we were thrilled it received so many awards including Cookery Book of the Year by the Guild of Food Writers. In light of this I think my next project would probably be a Patisserie book. I am happy with Richmond and Belgravia and our concession in Harrods is comfortable, I don't have plans for a high street roll out.   

What advice would you give to someone who is a first time visitor to your boutique?      

Why don't you start with a Jaffa Cake, affordable luxury that will bring back nostalgic memories. Or if you prefer something a little different, then thanks to Suzue's influence we have Japanese inspired couture chocolates and biscuits.
