After 17 years working in the restaurant industry, Mark HIX opened his first restaurant in 2008 - the distinguished Hix Oyster & Chop House in Smithfield, and has since opened a further five establishments. Mark has also written a number of books on British food, as well as a regular column in the Independent on Saturday magazine.
