Exclusive Interview with Joakim of Maitre Choux!

Maitre Choux is the first and only choux pastry specialist patisserie in the world and we are delighted to have it in London! Founded by Three Michelin Starred Chef Joakim Prat the patisserie is located in South Kensington and Joakim shared his story with us!

 

What encouraged you to start your own business?

While the quality of restaurants has really been improving around London over the past few years, pastries have mostly remained a bakery affair dominated by cupcakes, brownies, and other sponge cakes. We really wanted to bring to London the best that France has to offer. What better place to start than South Kensington which is the French stronghold in London! If we could convince the French locals that they did not have to go back to Paris every weekend to satisfy their sweet tooth cravings, it meant we were on to something! I strongly believe that the public is ready to welcome a high end pastry offer in London, and the welcome has been overwhelmingly positive!

Which are your favourite spots in London?

For winding down and a fun evening out I love Soho as its quirky and always changing. If I want something more high end I love to hangout at the bar of Chiltern Firehouse (which by the way serves our Eclairs and Choux), or at the newly opened Alan Yau restaurant Park Chinois.

 

What is your advice to a first time visitor to London?

 Don't be afraid to goout of the tourist itineraries and explore other areas like Clapham, Brixton,Southwark, there are so many great places to discover that it would be a shame to only stay where the tourist guides take you!

 

 If you were to recommend flavours to a first time visitor to Maitre Choux, which ones would they be?

My personal favourite is our coffee one. It is intense but not bitter, and it is truly what a coffee eclair should taste like. It took me months to perfect it, but I could not be happier with it.

The Chocolate one is also incredibly complex and intense in flavour, however it is lightened up with a whipped cream and therefore quite light even though the flavours are complex and dark.

It is very hard to choose because everyone seems to have a different favourite one, yet they all sell out every day! The Hazelnut one has also become a clear winner. People just love everything chocolate!
